With that powerhouse system you should look into tinkering with the User.ini settings, TC, it can make the game look even better. Especially if you also install a few error-fixing mods, but just tweaking the file can make a noticeable difference.
In fact, the settings menu is bugged and won't actually make some of the changes you select. Like Shadow Quality for instance, which is permanently stuck on low. These changes can only be done properly by changing values in User.ini.
Oh, and the engine allows for higher settings than the presets will default to regardless of whether they're bugged (some are pretty conservative even on Ultra), so as a result I have greater draw distance and smoother texture loading than normally possible. Looks neat. The added draw distance gets rid of a lot of the nasty popup in the forests around Flotsam.

Just overwrite the current stuff in your User.ini file (which should be located at C:/ Users > Username > My Documents > Witcher 2 > Config) that's under the [Rendering] part with this, save and then set the file to read-only. That should do the trick.
Putting it in read-only mode is important, else the game can randomly decide to throw the old settings from the menu back in there, which is what you don't want. By the way, the file also has a line called CustomRenderingSettings that's under [Engine]. You need to change it from 0 to 1 if it isn't already, or this won't work.
Of course, if you do like Bloom (I find it kinda excessive with all the other ambient lighting going on in this game) then change AllowBloom to 1. Same goes for Cutscene DOF.
And don't worry about performance, I have a system that's slightly below yours and I get highly playable FPS. You could put VSync back on if you experience screen tearing, but at these settings I don't, so I just leave it off to avoid frame drops if it gets below 60.
